About Pinot Grigio Rosé
With this unique Pinoy Grigio Rosé, Terre del Noce goes back the original roots of Pinot Grigio, that in the past would be vinified as rosé.
The most advanced winemaking techniques enable this Rosé to be compared to the famed white Pinot Grigio in its freshness, fragrance and elegance.
The wine is produced with grapes from vineyards along the Noce river at the foot of the snow-capped Dolomite mountains, where it finds its ideal climate and a very fertile soil.
Pinot Grigio Rosé
The grapes are hand-picked and delivered to the winery within a few hours so as to preserve freshness. The grapes are completely destemmed, crushed and then cooled to about 46°F/8°C, followed by cold maceration for a few hours. This technique allows a perfect light extraction of pink colour alongside producing a consistent taste and quality profile. The grapes are gently pressed in the winery with pneumatic presses and the must is then left for an entire night to clarify.
The following day the yeast is added and the alcoholic fermentation starts, at controlled a temperature (60-65°F/16-18°C). At the end of the fermentation the run-off takes place, and the wine is left on the lees before bottling.
